Ridiculously Delicious Paleo Protein Bars

Wow. I can't believe it's been a week since my last post. Time got away from me. I'm still trying to balance Life Coaching and Lifestyle blog and this past week was full of very exciting business plans that are in the works. I gotta lotta irons in the fire, so stay tuned for that.

This week I want to start off this beautiful Monday by sharing this killer recipe with you. Not only is it ridiculously delicious and obvi really healthy, but it was too easy to make.

People just starting the Paleo eating plan are always concerned about food on-the-go or snacks and these are a simple solution and are a great 10am or 3pm snack. 

Ingredients:

  • 1 cup of dates

  • 1 ripe banana

  • 2 scoops of protein powder

  • 1/2 cup of almonds

  • 1/2 cup of pumpkin seeds

  • 1/2 cup of walnuts

  • 1/2 goji berries

  • 2 squares of dark chocolate (70% or higher)

  • And any other seeds you'd like to throw in there. We had coconut flakes and chia seeds on hand.

Throw all ingredients in the a food processor until it's reached an even consistency. 

Place the mix into a parchment paper lined, 8x8 glass dish or baking sheet. 

Press everything down so it's all even. 

Place in the fridge for an hour to mold together. Then cut to your desired shape. Voila! I know, could it really be that easy? What until you taste!
